That 3.8l v6 pontiac motor can handle abuse and its a good motor when you keep up with maintenance had one for 6 years and the motor finally gave out at 275000 and thats with the abuse I put it through miss that vehicle
I'm not so sure that VW trans axle is going to be able to handle the torque that v6 makes. Probably the smoked clutch saved it. My recommendation would be to put a 200hp VW engine back in it. Reliability and ez to work on, you can't beat it.
Do yourself a favor and find a rebuilt Volkswagen motor and return that sandrail back to what it belongs to be. Those Volkswagen motors take all kinds of abuse and are light weight with lots of power. Certainly all the power you will ever need.
Trying to find an older Ford or something I could use the clutch plate out of those things are actually built the last song like the s*** they make now

Get a differential from a wrecked Porsche. Advanced adapters for the bell housing.

Use a clutch for a VW bus.
Junk that week transmission and use either a M21 or M22, 11 inch clutch and you'll have no more problems. A 2 speed powerglide would be different?
I cant fathom the mindset one would have to have to pull the motor and put in the v6 but leave the clutch as is
