
In a large skillet over medium heat, add garlic oil. Once hot, add chicken pieces and salt, and toss. Arrange chicken in single layer. Cook 7-10 min, flipping halfway, until chicken is just cooked through. Add BBQ sauce, and stir. Transfer to a plate.
Add romaine to a large mixing bowl and toss with maple dijon dressing. Top with chicken, tomatoes, corn cilantro, cheese and croutons.
