
Serve this instead of pudding. :=)
The preparation is from left-over aging chunks and nubbins of blue cheeses, herb/vegetable-flavored feta, aged brick, and Leyden. The Leyden gave a nice cumin kick to it.
It’s based mostly on the first recipe in this link.
Variations by me: lots more parsley, five rather than three tablespoons of butter, about five cloves of utterly pulverized garlic rather than one, a heel-of-the-thumb-sized chunk of ginger, utterly pulverized, (minus fibers), 1/4 cup of port, enough Sauvignon Blanc to make it smooth (and to rinse out the garlic/ginger pulverizer a number of times), and a few tablespoons of vodka to possibly slow down reproduction of the molds.
This all worked just fine. It is a forgiving preparation.
