In earlier day’s, it was made by hand-crushing a mix of 80% ripe phalsa/falsa with 20% just about ripe phalsa.

Then the mix was sieved, mixed with the spices (mentioned below) and chilled water and served over a glass filled with ice.

What is Falsa / Phalsa?

Falsa (Grewia asiatica), often called Indian Wild or Sherbat Berry, is a small, purple berry native to India and Southeast Asia. 

Known for its sweet-tart flavor, it is traditionally sold by street vendors during peak summer months. It’s available for 2-3 months but the taste is worth waiting the whole year.

Just like most berries, the fruit is rich in antioxidants, potassium, iron, and vitamin C, making it both delicious and nutritious.

Where to Find Falsa / Phalsa

  • In India, falsa is mostly available from May to July.
  • You’ll find them in local fruit markets, small carts, or organic food stores.
  • Frozen or dried falsa may be available in Indian or Asian grocery stores abroad.

How to Make Falsa Sharbat Syrup:

To make falsa sharbat syrup at home, you need just a handful of ingredients:

  • Falsa berries (fresh preferred, frozen also works)
  • Sweetener (I’m using stevia, you can use any or sugar/jaggery – just adjust to taste)
  • Black salt (kala namak)
  • Roasted cumin powder (jeera)
  • Red chili powder (can skip)
  • Chilled water
  • Ice cubes – for serving
  • Lemon juice (optional, for extra tang)
     

All these ingredients can be mixed as per your taste and availability.

How to Make Falsa Juice at Home – Step-by-Step

Step 1: Wash the Falsa Berries Thoroughly

Place the berries in a large bowl and rinse 2-3 times to remove dirt and dust.

 

Step 2: Blend the Juice/ Make Falsa Syrup

Place the washed falsas in a blender jar, along with black salt, roasted cumin powder, stevia (sugar or substitutes using), red chili powder, and water.

Blend to form a thick, smoothie-like consistency.

The syrup is ready (just do a taste test to add more of spices or water as per liking).

Step 3: Dilute and Chill

Now, take a few medium glasses and fill half of them with ice.

Pour the blended phalsa syrup

Add water.

Add extra cumin powder and salt on top and stir (optional, and taste before adding this).

Serve chilled

  • Store the prepared sharbat in a glass bottle or jar in the refrigerator.
  • It stays fresh for up to 3 days.
  • Shake well before each use as natural settling may occur.
