2-Minute Rocket Salad with Balsamic and Maple Dressing

This simple, 2-Minute Rocket Salad recipe is the perfect restaurant-style side dish for any meal! Peppery rocket is tossed in my favourite balsamic dressing ever, and served with parmesan shavings for a quick, easy and tasty dish.

An Easy Rocket Salad That Takes 2 Minutes To Make

  • Why choose this recipe? Did I mention the fact this rocket salad recipe only takes 2 minutes? 😂 It’s quick and simple, with a 3-ingredient dressing and salty parmesan shavings. Gluten free and so versatile – you can serve it with any hot or cold dish!
  • Top Tip: If you love this and want to make it *even* quicker to make (I know, madness right!?) you can make a bigger portion of the dressing and keep it in a tub ready to pour over your next rocket salad.
  • Serving Suggestions: When I say this rocket salad goes with anything I really mean it. Try it on the side of everything from homemade halloumi burgers to gluten free lasagne, or as part of a summer spread with potato salad, my chickpea and halloumi salad, La Scala chopped salad, gluten free couscous salad and more.

Ingredients and Substitutions

There’s a printable recipe card below for this easy rocket salad recipe with the full quantities. But here are the main ingredients and ideas for any swaps.

  • Rocket: Or arugula in the US! I use fresh rocket from the supermarket and this recipe uses 60g (3 cups) which is the normal pack size here in the UK.
  • Extra Virgin Olive Oil
  • Balsamic Vinegar: Yes this is gluten free! Check out my gluten free vinegar guide.
  • Maple Syrup: You can omit this if you like but I love the sweetness it adds.
  • Parmesan: For a dairy free version use a vegan hard cheese or omit this. It also works really well with feta for a different flavour profile.

How to Make My Rocket Salad Recipe

There’s a printable recipe card below with the method. But here are some step-by-step photos to show you how easy this 2-minute Rocket Salad recipe is.

Mix together the olive oil, balsamic vinegar and maple syrup. I find it easiest to either whisk it with a fork or shake it in a sealed container.

Pour the dressing over the washed rocket, sprinkle over the parmesan and toss together. Serve immediately.

To Store/Make-Ahead: I always recommend making this salad fresh as the dressing can cause the rocket to go soggy if left too long in the fridge.

You can always make the dressing beforehand and pour it over before serving though. I mean, it literally takes 2 minutes so there isn’t really much time to save!

  • Wash the rocket and shake off any excess water. Add to a large serving bowl.

  • Storage:  This salad is best made fresh otherwise it can go soggy if left in the fridge – but it only takes 2 minutes anyway. You can make the dressing in advance and toss together just before serving, if you like.
