Roasted Brussels Sprouts with Bacon and Chestnuts

These Brussels Sprouts with Bacon and Chestnuts are not just for Christmas – I’d eat them all year round if I could! Roasting the sprouts fills them with flavour, combined with the salty bacon and nuttiness of the chestnuts. So simple with only 4 ingredients.

Notes on these Roasted Brussels Sprouts with Bacon

  • THE Sprouts For Sprout-Haters! If you think you hate Brussels sprouts because you’ve always been subjected to boiled, soggy veg, you HAVE to make these roast sprouts with chestnuts and bacon. They’re a complete game-changer!
  • Make Ahead: If you want to save time on Christmas Day you could easily prepare this on Christmas Eve (or the night before serving!). Lay everything out on the baking tray and then pop this in the fridge ready for roasting.
  • Top Time-Saving Tip: I always cook these Brussels sprouts when the turkey is resting at Christmas – whack the oven up and roast them at the same time as the roast potatoes and other veg for the perfect timing.
  • Serving Suggestions: Obviously if you’re cooking a gluten free Christmas dinner you need all the trimmings! Gluten free Yorkshire puddings, make ahead gravy, gluten free stuffing balls, roast carrots and parsnips and gluten free cauliflower cheese are all essential!

Ingredients and Substitutions

Honestly, the ingredients for these sprouts with bacon and chestnuts couldn’t be any simpler. All you need to make them is:

  • Brussels Sprouts: I’d recommend using fresh instead of frozen.
  • Bacon Lardons: Or chopped streaky bacon works well too.
  • Cooked Chestnuts: Buy these precooked in vacuum packs.
  • Olive Oil: For drizzling to help them get nice and crispy.

Storing and Freezing Instructions

TO STORE: I recommend eating these roasted sprouts when fresh, but any leftovers can be stored in the fridge and then reheated in the oven or air fryer.

TO FREEZE: I personally haven’t tried freezing this recipe as I think the sprouts would go soggy when defrosted. I’d recommend making it from fresh.

Can I roast sprouts in the air fryer?

Yes you can! I tend to cook them in the oven as you can make a big batch. In the air fryer you’ll need to cook them in one even layer so may end up doing more than one batch if you’re feeding a lot of people. Toss everything in the olive oil, spread into one even layer in the air fryer basket, then air fry at 200C for 15-20 minutes, tossing half way, until crispy.

Do I need to parboil Brussels sprouts before roasting?

Honestly, I’ve never bothered to parboil my sprouts before roasting and I don’t see the need to add unnecessary steps (and washing up!) on an already busy day! Cutting them in half and roasting them cut-side-down traps the moisture as they cook, giving you a gorgeous crisp outside and tender inside. No soggy sprouts here!

What can I do with leftover sprouts and bacon?

Leftover sprouts are rare in our house (we’re big fans!) but they’re great chucked into my Boxing Day Hash or used in a Christmas Leftovers Pie. I like to reheat mine in the frying pan and serve them on the side of a Full English breakfast too!

Prevent your screen from going dark

  • Preheat the oven to 220C / 200C Fan / Gas Mark 7. Trim the sprouts and cut them in half lengthways.

  • Lay the sprouts on a baking tray (lined with baking paper) so they are cut-side-down. Sprinkle the bacon and chestnuts around the sprouts, season with black pepper and drizzle with the olive oil.

  • Roast for 20-25 minutes until the bacon has crisped up and the tops of the sprouts are starting to char. Remove from the oven and serve hot, with some extra salt and pepper to taste, if needed.

  • Storing: Any leftovers of these sprouts with bacon and chestnuts can be kept in the fridge and reheated in the air fryer or oven.
