Use your griddle for breakfast
Having a flat top griddle gives you so much versatility. Whether you’re making fried rice, quesadillas or seared steak, there are so many possibilities.
One of my favorite ways to use the griddle though is for breakfast. There’s just something special about waking up with a cup of coffee and going outside before it gets too hot out and cooking up a big meal.
I always start with the meat, usually bacon or sausage, because after it cooks, I’m left with meat drippings that add so much great flavor to the eggs.
When it comes to the eggs, you can cook them to order, just like if you’re working in a diner.
Sunny side up? No problem, just close the lid or add a griddle dome as they cook. Over easy? Just give them a quick flip.
You can even cook scrambled eggs. And when you toss them with bacon fat, they are so delicious.
Keep that griddle fired up, if you want to cook up crispy hash browns and pancakes.

Heat Griddle: Heat your griddle to 425F degrees. If using a Ninja FlexFlame, set the function to roast/bake and the temperature to 425F. If using the stove, place your griddle pan or skillet on the stove over medium-high heat.

Cook Bacon: Place the bacon on the preheated griddle in a single layer. Cook for 4-5 minutes. Once it starts to brown, give it a flip. Cook 1-2 more minutes to your desired crispiness.

Drain: Line a plate or pan with paper towels. Transfer the cooked bacon to the paper towels to drain off excess grease.

Fry Eggs: Crack the eggs onto the griddle on the bacon grease. Season with salt and pepper.

Over Easy: Cook for 3-4 minutes. Flip. Cook for 30 seconds.

Over Hard: Cook for 3-4 minutes. Flip. Cook for 2 minutes.

Scrambled: Crack the eggs into a bowl. Season and whisk vigorously. Pour onto the bacon grease. Cook 3-4 minutes, flipping periodically with a spatula.

Ingredients

- Bacon: You can use any type of bacon. I like Oscar Mayer original, but use whatever brand you like. If you use thick-cut bacon, add 2-3 minutes to your cook time.

How to cook bacon and eggs on a griddle
Heat your griddle temp to 425F degrees. If using a Ninja FlexFlame, set the function to roast/bake and the temperature to 425F. If using the stove, place your griddle pan, skillet or large pan on the stove over medium-high heat.
- STEP ONE: Place the bacon strips on the preheated griddle top in a single layer. If you’re cooking on the Ninja FlexFlame, you can fit 8 pieces on the half griddle and 16 pieces on the full griddle.

- STEP TWO: Cook for 4-5 minutes. Once it starts to brown, give it a flip. Cook 1-2 more minutes to your desired crispiness.


- STEP THREE: Line a plate or pan with paper towels. Transfer the cooked bacon to the paper towels to drain off excess grease.

- STEP FOUR: Crack the eggs onto the griddle on the bacon grease. Season with salt and pepper.

- STEP FIVE: Cook the eggs, depending on how much you like your yolks cooked.

How to serve bacon and eggs
Transfer the bacon and eggs to a large serving platter or place everyone’s perfectly cooked egg on their plate along with 2-4 strips of bacon.

Storage
Store leftover bacon and eggs in separate airtight container s in the refrigerator for 3-4 days. When you reheat the eggs in the microwave, the yolks will cook more.
Leftover bacon is great on BLT sandwiches.

Frequently Asked Questions
Yes. You can cook bacon and eggs at the same time, but you will need to add some sort of fat to the flat top grill before adding the eggs. Butter or avocado oil work great.
It’s best to cook the bacon first, because they’re you’re left with bacon drippings. The bacon grease helps so the eggs won’t stick, and it adds great flavor.
If you have a lot of grease after cooking the bacon, you can use a scraper to push some into the grease trap.
Pork is a very fatty meat, so it shouldn’t stick. However, if you do run into that problem or if you’re using turkey bacon, you should make sure your griddle is properly seasoned.
To season it, rub a light coat of canola oil on the griddle. Heat it up and let that warm and coat the surface.
