  3. This does not look like authenic traditional Bajan cooking to me. Marinating the chicken while it is cooking in the pan is alien to me. He mentioned the phrase' old school' yet he is not doing it that way. Traditional Caribbean cooking generally relies on marinatiing the meat for a long period to get the full flavours.. Even the way he cooked the rice is totally alien to me. But this is when you add the TV chef or chef approach to cooking traditional food , they begin adding and changing things, moving away from tradition. Furthermore, 'he keep diggin up in de rice'. My grandmother would have thrown him out the kitchen. This is more like the modernisation of cooking Bajan food, than traditional.

  4. Putting dry seasoning on when the chicken is already in the pan, and no marination is news to me! But looks real good after it gets cooked though, rice too!
