I understand it is nice to get it all done at once. But if the meat pieces are packed too tightly in the pan, they won’t get crispy; they need to be spaced out so each piece can fry rather than steam.

More tips to consider:

Don’t cook the meat in the pan all the way through. The meat will continue to cook while in the oven. Overcooked meat is dry no matter how much liquid it is cooked in.

Remember to add the pineapple pieces and bell peppers until after the sauce is mixed and poured into the pan. I add it to the top of the pan for extra color, crunch, and flavor.

Use canned pineapple instead of fresh, as fresh pineapple contains too much bromelain, which can make the chicken too mushy.

Slice the meat into chunks that are the same size so they cook evenly.

<picture loading="lazy" decoding="async" class="wp-image-46612">
</picture>

Recipe variations and add-ins:

Drums and thighs: Sometimes I make this easy dinner recipe with drumsticks and thighs instead of chopping up breasts into chunks. Just add some lettuce, onion, and more of your favorite toppings.

How to store leftovers:

Refrigerate: Leftovers can be stored in an airtight container in the fridge for 3 to 4 days.

Freezing: To keep them longer, I put leftovers in freezer bags to freeze for up to 3 months.

Defrost: Before reheating, I thaw leftovers in the fridge overnight.

Reheating: I reheat thawed leftovers in a skillet or saucepan over medium heat for several minutes.

<picture loading="lazy" decoding="async" class="wp-image-46614" title="">
</picture>

Frequently asked questions

Why is my baked Hawaiian Chicken so chewy?

The most common reason is overcooking. Since we cook the meat twice, be careful not to overcook it. The first: sear the chicken for a few minutes. You are not trying to cook the inside. In fact, move it around and take it out of the pan. Then, make sure you stir it frequently while the chicken bakes, and don’t let the internal temperature exceed 155°F. It will continue to cook as it rests.

How long should I marinate the chicken in pineapple juice?

I suggest marinating for 2 to 4 hours. This is the ideal length of time for getting the most flavor into the meat while still maintaining a firm texture. It will tenderize the chicken without making it mushy. I would only do this with canned pineapple juice, though. Do not use fresh pineapple juice because it contains too much bromelain.

Why is my sauce so watery?

It may be that the pineapple wasn’t drained well enough. If too much juice was added with the pineapple tidbits, the sauce may be too watery. The bell pepper also releases water as it cooks. This can cause the sauce to become watery. Don’t cover the baking dish while it cooks so the juices can evaporate. If that doesn’t happen, add a cornstarch slurry to thicken the sauce.

How can I get the chicken crispier?

If the chicken is not too crispy, go ahead and turn the broiler on. Broil it for 2 minutes, until golden and crispy. Be sure to keep the oven door open so it doesn’t burn, overcook, and dry out.

More delicious chicken recipes:

Loved this recipe? I’d love to hear from you! 💛 Leave a 5-star rating ⭐️ in the recipe card below and share your thoughts in the comments – I read and appreciate every single one!

Let’s stay connected!
