
Easy 3-Ingredient Honey Shortbread Cookies
If you’re looking for a super simple cookie recipe that still feels a little special, this is it. These honey shortbread cookies are lightly sweet, buttery, and come together with just a few pantry staples. No eggs, no complicated steps – just mix, roll, and bake.
I made these on a whim and they turned out so good. They have that classic shortbread texture but with a subtle honey flavor that makes them a little different (in a good way). Perfect with coffee, tea, or honestly just straight off the baking sheet.
Ingredients
- 1/4 cup honey
- 1/2 cup unsalted butter, melted
- 1 3/4 cups self-rising flour
- 1 tablespoon vanilla extract (optional)
Directions
- Preheat your oven to 325°F. Line a cookie sheet with parchment paper.
- In a bowl, mix the melted butter and honey together until fully combined and smooth.
- Add the flour (and vanilla if using) and mix until a dough forms.
- Lightly flour a surface and roll out the dough to about 1/5 inch thick.
- Use cookie cutters to cut out shapes and place them on your prepared baking sheet.
- Bake for about 15 minutes, or until the edges are just lightly golden.
- Let cool slightly… then enjoy!
Tips
- If the dough feels sticky, just add a little more flour while rolling it out.
- These don’t spread much, so you can place them fairly close together.
- Want a little extra flavor? A pinch of salt or cinnamon works really well here.
