Ingredients

  • 1 quart vegetable oil, for frying or as needed
  • ¾ cup milk
  • 1 large egg
  • 2 tablespoons minced onion
  • 1 cup baking mix
  • 1 cup cornmeal
  • 1 teaspoon salt

Directions

  • Heat the vegetable oil in a deep fryer or large saucepan to 350°F (175°C).
  • In a large bowl, whisk together the milk, egg, and minced onion.
  • Add the baking mix, cornmeal, and salt to the milk mixture. Stir until a smooth, thick batter forms.
  • Use a small ice cream scoop to portion the batter into ping-pong-ball-sized balls.
  • Carefully drop about 5 portions of batter into the hot oil per batch, leaving enough space for them to cook evenly.
  • Fry the hush puppies for 5 to 6 minutes, turning as needed, until they are golden brown and crispy.
  • Remove the cooked hush puppies with a slotted spoon and place them on a paper towel-lined plate to drain.
  • Repeat with the remaining batter until all the hush puppies are cooked.
