Step 1: Prepare the Pan and Oven
- Preheat your oven to 180°C (350°F).
- Line a 9 × 5 × 3-inch loaf pan with parchment paper, leaving some overhang to make removing the cake easier.
Step 2: Mix the Butter and Oil
- In a large mixing bowl, combine the softened butter and oil.
- Using a whisk or hand mixer, mix for three minutes until well combined.
- Add the sugar and continue mixing until the mixture is fluffy.
Step 3: Add the Eggs and Vanilla
- Add one egg and the vanilla extract, then beat well.
- Add the second egg and mix until combined.
Step 4: Add the Milk and Dry Ingredients
- Pour in half of the milk and mix for one minute.
- In a separate bowl, combine the all-purpose flour, salt, and baking powder.
- Add half of the dry ingredients to the wet mixture and mix briefly.
- Pour in the remaining milk and white vinegar, mixing for a few seconds.
- Finally, add the remaining flour mixture and mix just until combined.
- Avoid overmixing the batter, as this can make the cake less tender.

- The complete cake batter should weigh approximately 675 grams.
- Transfer 169 grams of the batter to a separate bowl.
- In a small bowl, combine the raspberry jelly powder with one tablespoon of warm water. Stir until dissolved.
- Add the raspberry mixture to the 169 grams of reserved batter and mix until the color is evenly distributed.
- You should now have two batters: vanilla and raspberry.
Step 6: Layer the Batters
- Add three large scoops of vanilla batter to the prepared loaf pan.
- Spoon small amounts of raspberry batter over the vanilla batter.
- Repeat these layers, alternating between the vanilla and raspberry batters until all the batter has been used.
- You don’t need to make the layers perfectly even. The marbling process will create the pattern.
Step 7: Create the Raspberry Swirls
This is my favorite part!
- Insert a butter knife into the batter, making sure it reaches the bottom of the pan.
- Move the knife lengthwise through the batter, from one end of the pan to the other. At the end, make a U-turn and continue in the opposite direction. Repeat this movement to create a continuous winding pattern.
- Next, move the knife from side to side across the width of the pan.
- Finish by repeating the lengthwise U-turn movement.
- This technique distributes the raspberry batter through the vanilla batter, creating beautiful swirls that run through the cake rather than appearing only on the surface.
Tip: You don’t need to create a perfect pattern. Every cake will have its own unique swirls, and that’s part of its charm!
Step 8: Bake the Cake
- Place the loaf pan in the preheated oven and bake for 43–45 minutes, or until a skewer inserted into the center comes out clean.
- If the top starts browning too quickly, loosely cover the cake with aluminum foil. This will help protect the top from becoming too dark while the center finishes baking.
