The highly anticipated opening of The Korean Cowgirl, a vibrant new restaurant that blends bold Korean fried chicken with traditional smoked America BBQ, is officially here. Located in Ashford’s Eureka Park, this exciting culinary destination is set to offer both locals and visitors an unforgettable dining experience.
The Korean Cowgirl offers a fresh twist on traditional dishes, combining the fiery heat and savoury umami of Korean cuisine with the satisfying smoked flavours from Texas. From spicy bites and wings, which are hand battered to get that authentic Korean crave-worthy crunch to melt-in-your-mouth smash burgers, the restaurant is redefining fusion dining with creative and mouthwatering dishes.
“We are incredibly excited to bring a one-of-a-kind dining experience to Ashford” said John Bingley, Executive Chef of The Korean Cowgirl. “Our pitmaster works around the clock to bring our USDA Texas style brisket and Korean BBQ sausage; which are cooked low and slow for 15 hours on our on-site smoker. We can’t wait for our guests to experience it.”

- Cowgirl Ramen: a rich bowl of chashu roast pork belly, extra creamy garlic tonkotsu broth, miso, a soy egg, spring onions, and nori for a perfect finish.
