Zucchini, goat cheese and pasta soup for babies


I wanted to make my daughter a little creamy soup for dinner.

Tiny pearl pasta is perfectly suitable for babies from 7 months old. Personally, I find it ideal for introducing baby to new textures in the mouth without the risk of choking! The pieces are so small… they remind me a little of semolina. They are becoming easier and easier to find in supermarket aisles, so you should not have any trouble finding them.

My daughter loved fresh goat cheese with zucchini. The combination of the two is magical, and it is a great way to introduce baby to a new, flavorful cheese if you have not already done so! I buy Monoprix fresh goat cheese in small portions. You can of course buy another brand, but simply make sure it is pasteurized.

Here is what you need to make this zucchini and fresh goat cheese creamy soup with tiny pearl pasta for baby (from 7 months):

    Cooking

    Start by boiling mineral water in a saucepan for the tiny pearl pasta. Once the water is boiling, add 2 tablespoons (20 g) of tiny pearl pasta and follow the cooking time indicated on the pasta package. Mine said 4 minutes, but I found that was far too short, so I cooked it for 7 minutes and tasted it as it cooked until it was nice and tender.

    Cooked tiny pearl pasta for babyCooked tiny pearl pasta for babyNext, let’s move on to the zucchini. Wash it well and peel it. Then cut it into slices.

    Zucchini for babyZucchini for babyPlace the slices in the steamer basket and start cooking. In the Cookeo, I counted 8 minutes under pressure. For regular steaming, I recommend 10 to 12 minutes. Let’s go!

    When the zucchini is cooked, place it in the blender with the pasteurized fresh goat cheese and the 2 teaspoons of olive oil. Blend!

    I’ll let you judge the consistency of your creamy soup. Normally, because the zucchini has soaked up water during cooking, there is no need to add any cooking water, but feel free to thin the creamy soup a little more or even turn it into a soup!

    Then add 1/3 cup (25 g) of cooked tiny pearl pasta to each portion of creamy soup.

    With these quantities, I got 12.3 oz (350 g) of creamy soup with tiny pearl pasta.

    Storage

    This delicious creamy soup is perfect for baby’s evening meal. Here is how to store it so it stays fresh and ready to enjoy:

    Refrigerator: You can store portions in the refrigerator for 2 days in an airtight container.

    Freezer: For longer storage, this creamy soup freezes well. Divide it into individual portions, place them in freezer-safe containers, and label them with the date. You can keep them in the freezer for 3 months.

    Thawing: When you want to use a frozen portion, place it in the refrigerator the night before. Then reheat it in the microwave or in a saucepan until warm, stirring regularly.

    Make sure to check the temperature of the creamy soup before serving it to baby to avoid burns.
